Its 1:40 AM and the salsa still has 20 minutes left to process. You see, Mr. Holiday-who-di-what-y (I tend to forget people's names in the middle of the night so I do the best I can) decided that we should not wait until tomorrow to make the salsa because the tomatoes are ready NOW. When they're ready - they're ready. So we started at 7:30 PM. Do you know how long it takes to blanch, peel, carve and squoosh a 5 gallon bucket of tomatoes? Then there's the peppers. I am heretofore relinquished of pepper duty F-O-R-E-V-E-R. Or at least until Mr. I-can-can buys me some rubber gloves. Never cut and de-seed peppers without rubber gloves because it burns your fingers and continues to burn until you are old and moldy. Then it burns a little bit more - just to remind you that it burns.
What was I talking about? Oh, the pot. So here's to any sibling that might be reading...Sean, Tami, Steve, Tara (except maybe only Tami reads this and possibly Tara if she gets bored enough at work - I don't know) John has officially claimed THE POT. The big huge gigantic pot -the aluminum pot - not the black water bath pot. (I will post a picture). It is perfect for making salsa. He already told mom when she dies - it's his. Anyone with guts enough to tell their mother-in-law he wants her stuff when she's gone deserves the big pot. I have to side with him because I benefit from the big pot even though it will never really be mine. So there - dibs on THE BIG POT.

By the way, the salsa turned out GREAT so I will give you a jar if you ask. We tweak it every year and this year I put my own little touch to it... AND the cat that was sitting on my lap while I type just bit my arm. Is my typing really that threatening? Its late. Now I am mad and I should go to bed.

ReplyDeleteAND I just found out that over time vinegar makes your salsa sweeter. I don't really like sweet salsa and used vinegar this year instead of lemon juice - dang.
